INGREDIENTS
1/2 lb. unsalted butter
12 oz. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 tbsp. sugar
1 c. buttermilk
DIRECTIONS
- Preheat oven to 425 degrees F.
- Grate butter on coarse side of cheese grater and freeze.
- On a cool, clean work surface, mix all dry ingredients together. Add the cold, grated butter and work it in with your fingertips, leaving the whole mixture fairly chunky with butter. Make a well in the center of the flour mixture and pour in buttermilk. Start stirring flour mixture into the buttermilk with a fork until it begins to hold together and then mix with your hands until a sticky dough forms.
- Flatten the dough to about one inch thick and fold up like you would a letter for an envelope and repeat three more times. Flatten the dough back to one inch thick and cut into 3 inch circles and place them on a buttered sheet pan so that their sides are touching – this will keep them moist inside. Bake at 425 degrees for about 20 minutes until a light golden color forms on the top. To enhance browning, remove baking sheet from the oven in the last 5 minutes of cooking and rub a little butter on the top of each biscuit. Then place back in the oven to finish baking.
