It doesn’t take much to transform a bland meatloaf into a smoky, savory dish that’ll keep ’em coming back for more!
Ingredients:
1 egg, beaten
1 clove garlic, minced
2 TBS Chipotle Pepper Rub
1/4 cup hickory barbeque sauce
1/2 red onion, diced
1/2 red bell pepper, diced
1/4 cup bread crumbs
1 lb chopped beef
Salt & Pepper to taste
Preheat oven to 375° F. Lightly coat interior of a 9 x 5 loaf pan with cooking spray. Mix all ingredients together until well blended. Put the raw meatloaf into the prepared pan and cook for 40 minutes or until internal temperature reaches 160° F. Remove from oven and allow to cool slightly before turning the loaf onto a serving tray.
Serve with mashed potatoes, green salad and corn muffins. Nom, nom!
