se one of summer’s favorite fruits, tomatoes, to create a delicious bruschetta.
Chop two medium tomatoes and 1-2 cloves of garlic and combine. Add 2-4 basil leaves, chopped and 1-2 Tbs of basil olive oil. Salt to taste.
For the garlic toast, slice a baguette lengthwise then cut each half in two, making 4 pieces. Sprinkle the cut side with garlic powder or vigorously rub a cut clove of garlic on the cut side of the bread. Drizzle basil olive oil on top of the seasoned side of the bread, then lightly sprinkle with dried oregano. Toast in the oven for about 5-7 minutes at 400°F. Remove the garlic toast from the oven and when cool enough to handle spread some of the tomato mixture on top of the toasted bread. Mangiare!
